About

About Kombu - Ramen & Bao Bar

Kombu - Ramen & Bao Bar is on Druid Lane in Galway and opened in 2025. It was set up by chef, restaurateur and author JP McMahon, and the menu is rooted in Japanese street food. Dishes include ramen bowls, teriyaki, tempura and rice dishes, along with bao buns. The dessert bao is a chocolate ganache bun topped with wasabi sea salt. The name refers to kombu, the Japanese seaweed, and McMahon is passionate about cooking with seaweed. The ramen and bao bar first ran as pop-ups at Aniar during the Blas na Gaillimhe Festivals of Food. You can eat in, and you can make a reservation.
