Everett's Restaurant is a modern Irish restaurant on High Street in Waterford city, in the John Collyn House, a building from the 15th century. The MICHELIN Guide gives it a Bib Gourmand in its Great Britain and Ireland 2026 edition. It also won the Bijou Restaurant of the Year 2026 title from the Georgina Campbell Fine Dining Awards, and the McKennas' Guides include it in their Irish restaurant list for 2026. Head chef Peter Everett is a Waterford native who opened Everett's to bring his own restaurant home to Waterford. The Front Room has elements that date to the 1460s, and The Vault, a historic wine cellar, can be booked as a private dining room. You can eat in, and you can book a table.
